Vegetable Rice with Savory Baked Tofu and Mushrooms -TCV

1 tbsp olive oil

8 ozs sliced mushrooms

8 ozs baked tofu -- diced

3 c cooked basic vegetable rice

 

In a large saucepan, heat oil over medium heat, and saute mushrooms until

tender, 6 minutes. Add tofu and saute until tofu is heated through, 5

minutes. Add Vegetable Rice, and toss to combine.

NOTES : Tips and Variations:

You can buy baked tofu in the produce section of most grocery stores or you

can make your own: Dice 8 ounces tofu and spread out on a baking sheet.

Mix 2 tablespoons soy sauce, 1/2 tablespoon pure maple syrup and 1

tablespoon water. Pour over tofu. Bkae at 350 for 30 minutes. Or try the

Baked Five-Spice Tofu.
