Guest guest Posted May 14, 2001 Report Share Posted May 14, 2001 * Exported from MasterCook * Tofu Chili -TCV Recipe By :Virginia Messina and Kate Schumann Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tbsp olive oil 1 med onion -- chopped 1/4 c chili mix 2 tsps mexican seasoning 14 ozs firm tofu -- drained and crumbled into bite-sized pieces 15 ozs Mexican-style stewed tomatoes -- or diced tomatoes 15 ozs tomato sauce 1 c frozen corn kernels 15 ozs chili beans with sauce -- S & W brand piquitos In a large pot, heat oil over medium heat, and saute the onion until golden brown, about 5 minutes. Add chili Mix, Mexican seasoning, and tofu. Stir until tofu is coated with the seasoning; then add the tomatoes, tomato sauce, corn, and beans. Simmer uncovered, stirring occasionally, over medium-low heat, 10 minutes.
