Guest guest Posted May 14, 2001 Report Share Posted May 14, 2001 * Exported from MasterCook * Three-Bean Chili - TCV Recipe By :Virginia Messina and Kate Schumann Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tbsp olive oil 1 med onion -- chopped 1/4 c chili mix 29 ozs diced tomatoes 15 ozs chili beans with sauce 15 ozs garbanzo beans -- drained 15 ozs black beans -- drained 1 tsp mexican seasoning -- up to 1 tbsp (optional) 1 avocado -- sliced for garnish (optional) 1/2 c chopped fresh cilantro -- optional 1/3 c chopped scallions -- including green portion (optional) In a large pot, heat oil over medium heat, and saute onion until golden brown, about 5 minutes. Stir in Chili mix; then add tomatoes, beans, and Mexican seasoning, if desired. Simmer, uncovered, stirring occasionally, over medium-low heat, 10 minutes.
