Lemon-Dill Rice with Garbanzo Beans and Sun-Dried Tomatoes - TCV

3 c hot cooked lemon-dill rice pilaf

15 ozs garbanzo beans -- drained about 1 1/2 cups

1/4 c chopped oil-cured sun-dried tomatoes

2 tbsps chopped fresh parsley -- or 1 tbsp dried

1/2 lemon -- juiced

1/4 c toasted sunflower seeds

 

While Lemon-Dill Rice Pilaf is still hot, stir in garbanzo beans, tomatoes,

and herbs. Right before serving, add lemon juice; fluff with a fork, and

garnish with sunflower seeds.
