Basic Tabouli -TCV

Amount Measure Ingredient -- Preparation Method

1 1/3 c tabouli mix

1 1/2 c boiling water

1/4 c freshly squeezed lemon juice

1/4 c olive oil

2 med tomatoes -- chopped

1 bunch scallions -- thinly sliced (about 6 scallions)

1 cucumber -- chopped (about 2 cups)

salt -- to taste

 

In a medium bowl, combine Tabouli Mix and water. Let stand until water is

absorbed and the bulgur is chewable, about 1 hour. Add remaining

ingredients, mix thoroughly, and refrigerate at least 1 hour. Adjust

seasonings with lemon juice and salt, if desired, right before serving.

NOTES : Chopped fresh parsley and mint, although not necessary, add a nice

touch of extra flavor.

 

Tips and Variations:

If you don't have an hour for the bulgur to soak, bring the water to a boil,

add the bulgur and boil 2 to 3 minutes. Remove from heat and let sit 15

minutes. Fluff with a fork before adding the remaining ingredients.
