Guest guest Posted May 14, 2001 Report Share Posted May 14, 2001 * Exported from MasterCook * Chili Pasta Salad (LOL) Recipe By :LOL Healthy Pasta and Grains (#35) Serving Size : 4 Preparation Time :0:15 Categories : Elf 1997 Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 ounces medium pasta shells -- (1/2 cup dry measure) 1 15-oz can vegetarian chili (or other canned chili with beans) 1 11-oz can whole kernel corn w/ red and green peppers -- drained 4 cups shredded romaine lettuce 1 ounce cheddar cheese -- (1/4-cup shredded) 1/4 cup sliced green onions Optional Toppings: light sour cream corn chips or quesadillas (corn tortilla with jack) Cook pasta according to package directions; drain. In same pan, combine pasta, chili and corn. Cook over medium heat until heated through (2-3 minutes). For each salad, place 1 cup lettuce on salad plate. Top with 1 cup chili mixture, 1 tablespoon cheese and 1 tablespoon green onion. Serve with sour cream and chips.
