Separate pitas into 2 rounds by piercing around the circumference with the tines of a fork and gently prying apart. Place them on a baking sheet. Step 2: Cover each round of bread with 4 tomato slices, 2-3 tablespoons mozzarella, 1/2 tablespoon Parmesan cheese, 1/4 teaspoon oregano, and vegetables. Step 3: Bake for 10 minutes. Makes 4 servings, 2 pita rounds each.
