Fresh Tomato Pita Pizza

4 whole wheat pita breads

4 medium tomatoes (a total of 16 1/4-inch slices)

1 1/2 cups part-skim mozzarella cheese (about 6 oz.)

1/4 cup parmesan cheese

1/4 cup chopped onion

1/2 cup sliced mushrooms

1/4 cup chopped green bell pepper

2 tsp. dry oregano leaves

 

Step 1: Preheat oven to 375 degrees. Separate pitas into 2 rounds by piercing

around the circumference with the tines of a fork and gently prying apart. Place

them on a baking sheet.

 

Step 2: Cover each round of bread with 4 tomato slices, 2-3 tablespoons

mozzarella, 1/2 tablespoon Parmesan cheese, 1/4 teaspoon oregano, and

vegetables.

 

Step 3: Bake for 10 minutes. Makes 4 servings, 2 pita rounds each.
