Tofu Italiano

1 pound pasta

1 onion -- chopped

2 tablespoons oil

1 pound tofu -- cubed

10 ounces frozen corn

10 ounces frozen peas

1/2 teaspoon oregano

1/2 teaspoon garlic powder

15 ounces canned tomato sauce

 

(Serves 4)

 

Pre-cook pasta in water according to directions. Sauté onion and tofu in

oil over medium-high heat for 5 minutes. Add remaining ingredients and

cook 10 minutes longer, stirring occasionally. Serve over your favorite

cooked pasta.

 

Total calories per serving: 309, total fat as % of daily value: 22%,

Protein: 16gm, carbohydrates: 38gm, fat: 14gm, Calcium: 159mg, iron: 9mg,

sodium: 773mg, dietary fiber: 8gm
