Guest guest Posted May 12, 2001 Report Share Posted May 12, 2001 * Exported from MasterCook * Succotash Recipe By : Vegetarian Celebrations by Nava Atlas, page 82 Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 large Sweet Vidalia onion -- chopped 2 cloves garlic -- minced 2 cups chopped ripe juicy tomatoes 1/2 teaspoon dried tarragon 1/2 teaspoon summer savory 1/2 teaspoon dry mustard 2 cups cooked corn kernels -- preferably fresh 1 cup string beans cut into 1-inch lengths and steamed 1 cup frozen baby lima beans -- thawed 2 teaspoons cider vinegar salt and freshly ground pepper -- to taste 6 servings Heat the oil in a large skillet. Add the onion and sauté over moderate heat until translucent. Add the garlic and continue to sauté until the onion is lightly golden. Add the tomatoes, dried herbs, and mustard and cook, stirring occasionally, for 5 minutes. Add the remaining ingredients and cook, covered, over very low heat, for 10 minutes, until heated through. Transfer to a serving container and serve at once.
