Cold Somen With Daikon And Carrots

Amount Measure Ingredient -- Preparation Method

4 dried shiitake mushrooms

8 ounces somen noodles

***DRESSING***

2 tablespoons tamari

OR natural soy sauce

1 tablespoon rice vinegar -- to taste, up to 2

1 tablespoon canola or peanut oil

1 tablespoon sesame seeds

1 teaspoon honey or brown rice syrup

***REMAINING INGREDIENTS***

1 medium daikon radish

(or substitute 1 or 2 crisp white turnips)

peeled and cut into matchsticks

2 large carrots -- peeled

and cut to match the daikon

2 scallions -- thinly sliced

for garnish

 

4 to 6 servings

 

Spaghetti-shaped somen noodles are traditionally eaten cold in Japan during

summer months.

 

Soak the shiitakes in hot water to cover for 15 minutes; drain. Remove and

discard the stems and slice the caps. If you'd like, reserve the liquid

for another use.

 

Cook the noodles in plenty of rapidly simmering water until al

dente. Drain and rinse under cool water, then drain well again.

 

Combine the dressing ingredients in a small bowl, and stir

together. Combine the noodles in a serving bowl with the daikon, carrots,

and dressing. Toss well and top with the scallions. Cover and refrigerate

until needed, or serve at once.
