Vegetables Appetizers And Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***SAUCE*** 1/4 cup tahini -- (sesame paste) 1/2 cup vegetable stock or water 2 tablespoons sherry or dry wine 2 tablespoons natural soy sauce 1 tablespoon dark sesame oil 1 tablespoon hoisin sauce 2 teaspoons sugar 1 teaspoon hot chile oil OR other Asian hot sauce more or less to taste ***REMAINING INGREDIENTS*** 8 ounces Chinese wheat noodles or udon noodles (or substitute spaghetti or linguine) Sesame seeds -- for garnish Thinly sliced scallion -- for garnish 4 to 6 servings as an appetizer A favorite Chinese restaurant appetizer comes together quickly with a no-cook sauce. Combine the sauce ingredients in a food processor, and process until smooth. Cook the noodles in plenty of rapidly simmering water until al dente. Drain and rinse until cool, then drain well again. In a large serving bowl, combine the noodles with the sauce, and toss well. Garnish with a sprinkling of sesame seeds and scallion, and serve.
