Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***DRESSING*** 3 tablespoons tamari or teriyaki sauce 3 tablespoons rice vinegar OR other mild white vinegar 1 tablespoon honey or brown rice syrup 2 tablespoons canola oil 1 teaspoon dark sesame oil 1/4 teaspoon dried hot red pepper flakes -- optional ***REMAINING INGREDIENTS*** 8 ounces soba noodles -- (buckwheat) OR udon noodles 8 ounces mung bean sprouts 4 ounces snow peas -- trimmed and cut in half crosswise 2 scallions -- minced, up to 3 4 to 6 servings Noodles are beloved in Japanese cuisine and are as welcome in cold dishes as warm. Combine the dressing ingredients in a small bowl, and stir together. Set aside. Cook the noodles in plenty of rapidly simmering water until al dente. Drain and rinse under cool water, then drain well again. Meanwhile, combine the bean sprouts and snow peas in a skillet with just enough water to keep the bottom moist. Cover and steam briefly over medium heat until they are slightly wilted. Drain and rinse under cool water, then drain well again. Combine the cooked noodles, sprouts, snow peas, scallions, and dressing in a serving bowl. Toss well and serve.
