Black and White Bean Salsa

Amount Measure Ingredient -- Preparation Method

1 cup canned black beans -- rinsed and drained

1 cup canned navy beans -- rinsed and drained

1 cup chopped plum tomatoes

1/2 cup canned corn -- drained

1/3 cup chopped fresh coriander

1/3 cup chopped green onions

1/3 cup chopped red bell peppers

2 tablespoons freshly squeezed lime juice

1 1/2 tablespoons olive oil

1 1/2 tablespoons chili powder

1 teaspoon minced garlic

freshly ground black pepper, to taste

 

In a bowl combine black beans, navy beans, tomatoes, corn, coriander, green

onions, red peppers, lime juice, olive oil, chili powder, and garlic; mix well.

Season to taste with pepper.
