Cinnamon Apple Pancakes

Amount Measure Ingredient -- Preparation Method

1 cup whole wheat flour

1 cup unbleached white flour

1 teaspoon baking powder

1 1/2 teaspoons cinnamon

2 egg whites -- lightly beaten

3 tablespoons light brown sugar

1 1/2 cups applesauce

1/4 cup low-fat milk or soymilk -- or as needed

3 tablespoons finely chopped walnuts

extra applesauce and cinnamon

 

Makes about 24 3- to 4-inch pancakes -- 4 to 6 servings

 

Combine the first 4 ingredients in a mixing bowl. In another bowl, combine

the beaten egg whites with the brown sugar and stir until the sugar is

dissolved. Stir in the applesauce and milk. Make a well in the center of

the flour mixture and spray just enough cooking oil spray on a nonstick

griddle to coat it lightly. Ladle the batter on in scant 1/4

cupfuls. Cook over moderate heat on both sides until golden brown. These

need to brown a bit more slowly than do most griddle- cakes to be cooked

all the way through. Keep them warm in a covered casserole dish in a

200-degree oven until all are done. Serve hot with extra applesauce and a

dusting of cinnamon.
