Guest guest Posted May 11, 2001 Report Share Posted May 11, 2001 * Exported from MasterCook * Oat And Wheat Bran Muffins Recipe By : Vegetarian Celebrations by Nava Atlas, page 72 Serving Size : 12 Preparation Time :0:00 Categories : Breads, Quick Breakfast Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat pastry flour 1/4 cup wheat germ 1/2 cup oat bran 1/2 cup wheat bran 1 teaspoon baking soda 1 teaspoon baking powder 2 egg whites -- lightly beaten 3/4 cup buttermilk 3/4 cup applesauce 2 tablespoons molasses 2 tablespoons honey 3 tablespoons canola oil 1 teaspoon grated lemon or orange rind 1/4 cup toasted sunflower seeds 1/2 cup golden raisins Makes 1 dozen Preheat the oven to 350 degrees. Combine the first 6 ingredients in a mixing bowl. In another bowl, combine the next 7 ingredients and beat together until smooth. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir vigorously until thoroughly combined. Stir in the sunflower seeds and raisins. Divide the batter among 12 oiled or paper-lined muffin tins. Bake 20 to 25 minutes, or until a toothpick inserted in the center of a muffin tests clean.
