Cilantro Soup (Sopa de Cilantro)

Amount Measure Ingredient -- Preparation Method

6 medium russet potatoes -- cut into 1 " cubes

6 cups vegetable stock

2 cloves garlic -- (to 3) minced

1 cup cilantro leaves

hot sauce to taste

juice of 2 lemons

 

Cook the potatoes in the stock over medium heat about 15 minutes or until fork

tender.

 

Remove from the heat and stir in everything except the lemon juice. In a food

processor

or blender, puree the soup in small batches until smooth. Stir in the lemon

juice and

serve immediately, perhaps garnished with a cilantro leaf and a little lemon

zest.
