Guest guest Posted May 10, 2001 Report Share Posted May 10, 2001 * Exported from MasterCook * Haricot Bean Soup (English style) Recipe By :British Aid Committee, Not By Bread Alone Serving Size : 3 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups stock or water -- or more 2 cups milk 1 cup dried small navy beans 2 tablespoons butter 1 onion 1 celery stalk Salt and pepper to taste Wash and soak the beans for 12 hours, melt the butter in a pan, add sliced onion and celery, and fry a few minutes without browning, then add the beans, cover tightly and steam for 20 minutes. Add the stock or water with 1/2 a teaspoon salt, and simmer for about 3 hours. Strain, and rub the vegetables through a wire sieve, return to pan, add the milk and bring to boil. Season to taste and serve. Time about 4 hours. Serves 3 persons. TIPS - Haricot beans are the many varieties of seeds of legumes. The mature seeds come in assorted sizes and may be either creamy white or slightly kidney shaped: great Northern, navy, small white, white kidney, cannellini, yankee beans. Or pink to red or reddish brown kidney shapes: kidney beans, pinto, pinks, Mexican beans. The immature seeds are known as flageolets: pale green to white, creamy, slightly kidney shaped.
