Guest guest Posted May 10, 2001 Report Share Posted May 10, 2001 * Exported from MasterCook * Bulgur with Hot Pepper Sauce and Vegetables Recipe By :Undisclosed Serving Size : 2 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup bulgur 1 cup water -- boiling 1 tablespoon oil 1/2 cup onion -- chopped 1/2 teaspoon garlic clove -- crushed 1/4 cup celery -- chopped 1/2 cup red bell pepper -- sliced 1 tablespoon hoisin sauce 1 teaspoon chili sauce 1 1/2 teaspoons soy sauce 1/16 teaspoon pepper 1/2 cup frozen peas 1/4 cup parsley -- chopped 1/2 cup carrot -- thinly sliced 1/4 cup peanuts -- chopped 1/8 teaspoon salt 1/16 teaspoon pepper 1 1/2 teaspoons lemon juice In a bowl combine bulgur and boiling water; set aside for 10 minutes. Heat oil in a large skillet over medium-high heat. Add chopped onion, crushed garlic cloves, and chopped celery. Saute until the onion is soft, about 3 to 4 minutes. Add thinly sliced red bell pepper; cook 3 to 4 minutes longer. Stir in hoisin sauce, chili sauce, soy sauce, and pepper. Cook for 5 minutes. Drain the bulgur and squeeze dry. Add to the vegetables with frozen peas, chopped parsley, thinly sliced carrots, and chopped peanuts. Stir and cook for 1 to 2 minutes, or until heated through. Season with salt, pepper, and lemon juice.
