Tofu " Coddies "

 

Recipe By : Simply Vegan by Debra Wasserman, page 102

Amount Measure Ingredient -- Preparation Method

1/2 pound tofu -- crumbled

1 cup water

2 potatoes -- canned or boiled

-- and peeled

1/2 cup whole wheat pastry flour

1 tablespoon tamari or soy sauce

2 tablespoons Old Bay Seasoning

1 cup wheat germ

2 teaspoons oil

 

(Serves 4)

 

Blend tofu, water, and potatoes in a food processor. Add flour, tamari and

seasoning to blended mixture to form a stiff dough. Roll into patties and

dredge in wheat germ. Fry in lightly oiled pan until golden brown on each

side. Drain on paper towels before serving.

 

Total calories per serving: 234, total fat as % of daily value: 11%,

Protein: 13gm, carbohydrates: 34 gm, fat: 7gm, Calcium: 85 mg, iron: 6 mg,

sodium: 265 mg, dietary fiber: 7gm
