1/4 cup water

1 cup drained canned chickpeas

3/4 teaspoon crushed garlic

2 tablespoons lemon juice

4 teaspoons olive oil

1/4 cup tahini

1 tablespoon chopped fresh parsley

 

Serves 4 to 6. In a food processor, combine water, chickpeas, garlic, lemon

juice, oil, and tahini; process until creamy and smooth.

 

Transfer to a serving dish; sprinkle with parsley.
