Black Bean and Roasted Garlic Spread

4 whole garlic heads

1/2 tablespoon olive oil

1 19 oz can black beans

1 tablespoon olive oil

2 teaspoons balsamic vinegar

 

Preheat oven to 375F.

 

Slice 1/4 inch off the top of each garlic head. Remove loose outer skin. Place

each head cut-side up in a casserole dish. Drizzle with 1/2 tbsp oil. Cover

and bake in preheated oven for 40 to 45 minutes or until cloves are very soft.

Remove from oven and allow to cool.

 

Meanwhile, place beans in a food processor or blender. When garlic is cool

enough to handle, squeeze cloves from heads into the food processor. Process

until smooth. With the motor running, add olive oil and vinegar; process until

combined. If desired, season to taste with salt and pepper. Store in the

refrigerator for up to 3 days
