Guest guest Posted May 8, 2001 Report Share Posted May 8, 2001 * Exported from MasterCook * Golden Tofu with Broccoli and Peanut Sauce Recipe By :Parents Magazine 1999 Jan Serving Size : 4 Preparation Time :0:00 Categories : Pasta Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup creamy peanut butter 1/3 cup water 2 1/3 tablespoons rice wine vinegar 2 1/3 tablespoons lite soy sauce 2 garlic cloves -- crushed in a garlic press 2 teaspoons light brown sugar 3/4 teaspoon hot pepper sauce 1 pound firm style tofu 2 tablespoons sesame oil 8 ounces capellini pasta 2 cups broccoli florets 1/4 cup chopped fresh cilantro 3 green onions -- thinly sliced 1.In large bowl, whisk together peanut butter, water, vinegar, soy sauce, garlic, brown sugar, and hot-pepper sauce until combined; set aside. 2. Cut tofu into 8 slices about 1/20 thick; lightly score slices. Blot tofu with paper towels to absorb excess moisture. 3. Heat oil in large nonstick skillet over medium heat; cook tofu 4 to 5 minutes per side, until golden brown. Transfer to a plate; keep warm. 4. While tofu is cooking, bring large pot of lightly salted water to a boil. Add pasta and broccoli florets; cook 3 minutes, until broccoli is crisp- tender and pasta is cooked. Drain well. 5. Toss pasta and broccoli in peanut sauce. To serve, divide pasta among four plates; top with tofu slices and garnish with cilantro and green onions.
