But I thought they were interesting, so I kept them in the recipe. FWIW, I keep frozen bananas on hand, and if I need one for baking, I thaw it in the microwave, then mix with the other ingredients. Made some awesome pancakes the other day using a thawed and mashed banana. Ellen * Exported from MasterCook Mac * CAKE-LIKE CHOCOLATE CHIP COOKIES Recipe By : Simply Vegan, Debra Wasserman Serving Size : 1 Preparation Time :0:00 Categories : Cookies & Bars Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package chocolate chips -- (12 ounce) 1 teaspoon baking soda 2 1/4 Cups whole wheat flour 1 1/2 teaspoons vanilla extract 1 large banana -- mashed 1/4 Cup maple syrup 1/2 Cup water (Makes 2 dozen) Preheat oven to 375 degrees. Mix all the ingredients together in bowl. Form 24 cookies on a lightly oiled cookie sheet. Bake for 8-10 minutes at 375 degrees. Cool cookies before removing from the cookie sheet. I have used applesauce and even vegan lemon pudding in place of bananas.
