Zero Fat Potato Salad

1 1/2 pounds potatoes -- peeled and cubed

1/4 cup Morningstar Farms® Scramblers®

1/4 cup chopped green peppers

2 tablespoons chopped celery

2 tablespoons chopped onions

2 tablespoons sweet pickle relish

1/4 cup skim buttermilk

1/4 cup fat-free mayonnaise type salad dressing

2 teaspoons prepared mustard

1/2 teaspoon celery seed

1 teaspoon sugar

1/4 teaspoon garlic powder

1/2 teaspoon salt

 

Cover potatoes with water and bring to boil. Cook until tender but still firm

(about 10 minutes). Drain and cool.

 

Cook MORNINGSTAR FARMS SCRAMBLERS until firm over low heat. Do not stir. Cool

and chop like hard boiled eggs.

 

Place potatoes and chopped SCRAMBLERS in mixing bowl. Add green peppers,

celery, onions and pickle relish.

 

In separate bowl, combine buttermilk, mayonnaise, mustard, celery seed, sugar,

garlic powder and salt. Stir.

 

Pour mayonnaise mixture over potato mixture. Gently toss. Chill for several

hours.
