Zucchini Bread

3 cups all-purpose flour

1 1/2 cups sugar

4 1/2 teaspoon baking powder

1 teaspoon salt

1 cup walnuts -- chopped

8 ounces Morningstar Farms® Scramblers®

2/3 cup vegetable oil

2 cups zucchini -- shredded

2 teaspoons lemon peel -- grated

 

Preheat oven to 350º F. Coat two 8-inch loaf pans with non-stick cooking spray.

 

In large bowl, combine flour, sugar, baking powder, salt and chopped walnuts.

In a medium sized bowl, combine MORNINGSTAR FARMS SCRAMBLERS, oil, zucchini and

lemon peel. Stir in flour mixture just until flour is moistened. Spoon batter

evenly into pans.

 

Bake for 1 hour or until toothpick inserted in center comes out clean. Cool

bread in pans on wire rack 10 minutes; remove from pans and finish cooling on

wire racks.
