Guest guest Posted May 8, 2001 Report Share Posted May 8, 2001 * Exported from MasterCook * Tofu/Squash Scramble Recipe By : Simply Vegan by Debra Wasserman, page 97 Serving Size : 2 Preparation Time :0:00 Categories : Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup vegetable broth 1 medium yellow squash or zucchini -- finely chopped 1/2 small onion -- minced 1/4 teaspoon pepper 2 teaspoons basil 1/2 pound tofu -- crumbled 1/4 teaspoon tamari or soy sauce -- (optional) (Serves 2) Sauté all the ingredients except the tofu and tamari or soy sauce together over medium-high heat until the squash begins to soften. Add tofu and tamari or soy sauce and continue sautéing for another 3-5 minutes. Serve hot.
