Tofu/Squash Scramble

 

Recipe By : Simply Vegan by Debra Wasserman, page 97

Amount Measure Ingredient -- Preparation Method

1/4 cup vegetable broth

1 medium yellow squash or zucchini -- finely chopped

1/2 small onion -- minced

1/4 teaspoon pepper

2 teaspoons basil

1/2 pound tofu -- crumbled

1/4 teaspoon tamari or soy sauce -- (optional)

 

(Serves 2)

 

Sauté all the ingredients except the tofu and tamari or soy sauce together

over medium-high heat until the squash begins to soften. Add tofu and

tamari or soy sauce and continue sautéing for another 3-5 minutes. Serve hot.

 

Total calories per serving: 119, total fat as % of daily value: 9%,

Protein: 11 gm, carbohydrates: 9 gm, fat: 6 gm, Calcium: 151mg, iron 7mg,

sodium 11mg, dietary fiber 3gm
