Guest guest Posted May 8, 2001 Report Share Posted May 8, 2001 * Exported from MasterCook * Tofu-Stuffed Cherry Tomatoes Recipe By : Simply Vegan by Debra Wasserman, page 98 Serving Size : 4 Preparation Time :0:00 Categories : Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound cherry tomatoes 1/2 pound tofu -- crumbled 1/2 teaspoon oregano 1/4 teaspoon garlic powder 1/4 teaspoon turmeric -- (optional) Salt and pepper -- to taste (Serves 4) Remove stems from cherry tomatoes and carefully cut a small hole in the top of each tomato. Remove and save tomato pulp. In a small bowl mix tofu, tomato pulp, and spices. Stuff cherry tomatoes with this mixture and serve chilled.
