Tofu-Stuffed Cherry Tomatoes

Amount Measure Ingredient -- Preparation Method

1/2 pound cherry tomatoes

1/2 pound tofu -- crumbled

1/2 teaspoon oregano

1/4 teaspoon garlic powder

1/4 teaspoon turmeric -- (optional)

Salt and pepper -- to taste

 

(Serves 4)

 

Remove stems from cherry tomatoes and carefully cut a small hole in the top

of each tomato. Remove and save tomato pulp.

 

In a small bowl mix tofu, tomato pulp, and spices. Stuff cherry tomatoes

with this mixture and serve chilled.

 

Total calories per serving: 55, total fat as % of daily value: 5%, Protein:

5 gm, carbohydrates: 4 gm, fat: 3 gm, Calcium: 65 mg, iron: 3 mg, sodium: 8

mg, dietary fiber: 2 gm
