Guest guest Posted May 6, 2001 Report Share Posted May 6, 2001 * Exported from MasterCook Mac * Sauteed Swiss Chard with Olives Recipe By : Voluptuous Vegan - Kornfeld Serving Size : 6 Preparation Time :0:00 Categories : **Voluptuous Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cloves garlic 3/4 tsp sea salt 3 tbsps fresh lemon juice 4 tbsps extra virgin olive oil 3 lbs Swiss chard, 2 bunches -- red or green 1/2 c olives -- chopped Mash garlic and salt into a paste. Whisk in lemon juice and drizzle. whisk in oil. Cut chard leaves off the stems then into large bite-size pieces and place in large bowl of cold water. Swish to loosen dirt; remove. Place chard in large pot or skillet and cook in water clinging to leaves over medium heat for 3-4 minutes, or until leaves are wilted and bright green. Stir frequently or toss to push uncooked leaves to bottom. Toss in garlic mixture and chopped olives and stir well to combine.
