Guest guest Posted May 6, 2001 Report Share Posted May 6, 2001 * Exported from MasterCook Mac * Roasted Chickpea Nuts Recipe By : Voluptuous Vegan - Kornfeld Serving Size : 1 Preparation Time :0:00 Categories : **Voluptuous Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c cooked chickpeas, or 1 15 oz can chickpeas, drained and rinsed 2 tbsps canola or coconut oil salt 1 tbsp fresh lemon juice 1 tbsp peeled ginger -- minced generous sprinkle of cayenne pepper Preheat oven to 375. In medium bowl, toss chickpeas with oil, sprinkle of salt, lemon juice, ginger and cayenne. Spread on parchment-covered baking sheet and roast for about 45 minutes, stirring 2-3 times, until chickpeas are shrunken and browned. They can be eaten hot, warm or at room temperature.
