Scrambled Tofu And Bok Choy

Amount Measure Ingredient -- Preparation Method

1 1/2 teaspoons oil

1/2 pound bok choy -- chopped

(stems and leaves)

12 snowpeas

Shake black pepper

1 small onion -- minced

1 teaspoon turmeric -- (optional)

1 pound tofu -- crumbled

1 tablespoon tamari or soy sauce

 

(Serves 4)

 

Sauté all the ingredients except the tofu and tamari or soy sauce for 2

minutes over medium-high heat. Add the tofu and tamari or soy sauce and

sauté 2 minutes longer. Serve hot for breakfast or lunch.

 

Total calories per serving: 124, total fat as % of daily value: 11%,

Protein: 11gm, carbohydrates: 6gm, fat: 7gm, Calcium: 190 mg, iron: 7 mg,
