Curried Tempeh And Rice Dish

Amount Measure Ingredient -- Preparation Method

1 cup basmati rice

2 1/2 cups water

1 onion -- chopped

1 tablespoon oil

10 ounces packaged tempeh -- cubed

1/4 cup water

1 cup frozen or fresh peas

1 teaspoon tamari or soy sauce

2 teaspoons curry powder

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

 

(Serves 3-4)

 

Cook rice in water until done. In a separate frying pan, sauté onion in

oil for 2 minutes. Add cubed tempeh, water, peas, tamari or soy sauce, and

spices. Stir-fry for 8 minutes. Serve over cooked rice.

 

Total calories per serving: 504, total fat as % of daily value: 18%,

Protein: 25 gm, carbohydrates: 76 gm, fat: 12 gm, Calcium: 129 mg, iron: 5

mg, sodium: 173 mg, dietary fiber: 4 gm
