Karen's Creamy Rice Pudding

 

Recipe By : Simply Vegan

Amount Measure Ingredient -- Preparation Method

2 Cups pre-cooked rice

1 1/2 teaspoons cinnamon

1 Tablespoon vanilla extract

1 Cup raisins

1/2 Cup slivered almonds -- (optional)

3 Cups soy milk -- (3 to 4)

 

Mix all the ingredients together in a pot. Simmer until the mixture

begins to thicken (15-20 minutes), stirring occasionally.

 

Remove from stove and serve hot or cold.

% of calories from fat: 5%

Protein: 5 gm

Carbohydrates: 34 gm

Fat: 3 gm

Calcium: 47 mg

Iron: 1.5 mg

Sodium: 53 mg
