Amount Measure Ingredient -- Preparation Method

2 scallions -- thinly sliced

1 jalapeno, minced -- stemmed and seeded

1 med cucumber, 1 cup, peeled, seeded and -- cut in

1/4 " cubes

1/2 c red onion -- minced

2 cloves garlic -- minced

1/2 c fresh cilantro -- chopped

2 ripe avocados

2 tbsps fresh lime juice

salt

 

Combine scallions, jalapeno, cucumber, red onion, garlic and cilantro in

medium bowl. Cut avocados in half and remove pits. Holding each avocado

half in one hand, make 1/4-inch crosshatch cuts though the flesh with a

table knife, cutting down to skin. Scoop out avocado cubs with spoon.

Add to bowl with lime juice an mix gently. Season with salt to taste.
