Carrots, Daikon and Mustard Greens

Amount Measure Ingredient -- Preparation Method

1 lb mustard greens, stems removed -- cut in 1 "

pieces

1 tbsp extra virgin olive oil

2 cloves garlic -- minced

1 1 " piece ginger, peeled -- minced

1/2 c apple cider or apple juice

3 med carrots, 2 cups, peeled -- cut in 1 " chunks

1/2 lb daikon, 2 cups, peeled -- cut in 1 " chunks

salt

 

Wash greens and set aside. Warm oil, garlic and ginger together in

medium skillet over medium heat and cook stirring until garlic is just

starting to brown lightly, about 2 minutes. Add cider, carrots and

daikon, cover and cook for about 5 minutes, stirring occasionally. Then

add greens and cook, stirring occasionally for another 4 mintues or

until carrots and diakon are cooked through and greens are tender.

Season with salt to taste.
