Guest guest Posted May 5, 2001 Report Share Posted May 5, 2001 * Exported from MasterCook * Leek & Tofu Burgers Recipe By : BH & G Low-Fat & Luscious Vegetarian, page 146 Serving Size : 6 Preparation Time :0:00 Categories : Grilling Sandwiches Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Nonstick spray coating 1 cup sliced leeks 1/2 cup shredded carrot 1/2 teaspoon grated gingerroot 10 1/2 ounces packaged firm light tofu -- (fresh bean curd) 1 slightly beaten egg white 2 tablespoons light teriyaki sauce 3/4 cup fine dry bread crumbs 2 tablespoons chopped nuts such as peanuts or pecans or cashews 1/2 cup plain fat-free yogurt 1/4 cup shredded zucchini 1/8 teaspoon garlic powder 6 lettuce leaves 3 large pita bread rounds -- halved crosswise Make these ginger-scented, heart-healthy burgers ahead of time. Chill the mixture overnight for a meal that goes together in a flash the next day. Spray an unheated medium skillet with nonstick coating. Preheat over medium-high heat. Add leeks, carrot, and gingerroot; cook and stir until vegetables are tender. Remove from heat; cool slightly. Drain tofu thoroughly, pressing out excess liquid. Crumble tofu into a blender container or food processor bowl. Add leek mixture, egg white, and teriyaki sauce. Cover and blend or process with several on-off turns until vegetables are finely chopped. Transfer vegetable mixture to a mixing bowl. Stir in bread crumbs and nuts. Cover and chill at least 1 hour. Shape mixture into 6 patties, about 3 inches in diameter. Spray a grill basket or broiler pan with nonstick coating. Place patties in prepared grill basket. Grill on the rack of an uncovered grill directly over medium-hot coals about 10 minutes or until heated through, turning once. (Or to broil, spray a broiler pan with nonstick coating. Place patties on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat about 10 minutes, turning patties after half of the broiling time.) Meanwhile, in a small bowl stir together the yogurt, zucchini, and garlic powder. Serve patties and lettuce leaves in pita bread halves with the yogurt mixture. Makes 6 main-dish servings. Preparation time: 30 minutes. Chilling time: 1 hour. Grilling time: 10 minutes.
