Wonderful! * Exported from MasterCook * Zucchini Tomato Saute with Feta Cheese Recipe By :Superfast Healthy Cooking Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 teaspoon olive oil 1 cup coarsely chopped onion 1 pound zucchini -- (4 cups sliced) 1/2 teaspoon salt 1/8 teaspoon freshly ground black pepper 2 cups cherry tomatoes 1/4 cup (1 ounce) crumbled feta cheese 2 teaspoons chopped fresh dill TO SERVE: hot linguine or other pasta butter olive oil freshly grated parmesan cheese Heat oil in a large nonstick skillet over medium-high heat. Add onion; saute 3 minutes. Add zucchini, salt, and pepper; saute 3 minutes. Add tomatoes; saute 4 minutes. Remove from heat. Stir in cheese and dill.
