pasta, sorta! a dish to serve along side or with pasta.

We had something very similar but I used basil instead of dill. Wonderful!

Zucchini Tomato Saute with Feta Cheese

1/2 teaspoon olive oil

1 cup coarsely chopped onion

1 pound zucchini -- (4 cups sliced)

1/2 teaspoon salt

1/8 teaspoon freshly ground black pepper

2 cups cherry tomatoes

1/4 cup (1 ounce) crumbled feta cheese

2 teaspoons chopped fresh dill

TO SERVE:

hot linguine or other pasta

butter

olive oil

freshly grated parmesan cheese

 

Heat oil in a large nonstick skillet over medium-high heat. Add onion; saute 3

minutes. Add zucchini, salt, and pepper; saute 3 minutes. Add tomatoes; saute 4

minutes. Remove from heat. Stir in cheese and dill.

 

Per serving: Calories 77 (305 from fat), Fat 3 g (1 g saturated), Protein 4g,

Carbohydrate 128, feta cheese Fiber 2 g, Cholesterol 6 mg, Iron 1 mg, Sodium 385

mg, Calcium 71mg
