Most readily available during the winter months, it might be labeled with its French name mirliton, at your supermarket. In a medium saucepan combine chayote, water, barley, green onions, mixed fruit bits, bouillon granules, and curry powder. Bring to boiling; reduce heat. Simmer, covered, for 10 to 12 minutes or until barley is tender and broth is absorbed. Sprinkle with almonds or peanuts. Makes 3 main-dish servings. Start to finish: 25 minutes.
