1 chayote -- (about 12-ounces)

cut into 1/2-inch cubes

1 cup water

1/3 cup quick-cooking barley

1/4 cup thinly sliced green onions

1/4 cup mixed dried fruit bits

1 teaspoon instant vegetable bouillon granules

1/2 teaspoon curry powder

1/4 cup slivered almonds -- toasted

OR coarsely chopped peanuts

 

Pale green and pear-shaped, chayote (chaw-YOTE-ee) is actually a fruit that

tastes like a mild squash. Most readily available during the winter

months, it might be labeled with its French name mirliton, at your supermarket.

 

In a medium saucepan combine chayote, water, barley, green onions, mixed

fruit bits, bouillon granules, and curry powder. Bring to boiling; reduce

heat. Simmer, covered, for 10 to 12 minutes or until barley is tender and

broth is absorbed. Sprinkle with almonds or peanuts. Makes 3 main-dish

servings.
