Josie's Barbecue Sauce

1 tablespoon extra-virgin olive oil

1/2 teaspoon minced shallots

1 teaspoon minced garlic

1/2 tablespoon minced fresh ginger

1 cup chopped onions

4 fresh basil leaves

1/2 cup cider vinegar

2 tablespoons tomato paste

10 whole canned plum tomatoes (14 1/2 oz can)

1 tablespoon minced fresh cilantro

1 1/2 teaspoons chili powder

1 teaspoon ground coriander

1/2 teaspoon ground cumin

1 teaspoon sea salt

1/8 teaspoon freshly ground black pepper

1 tablespoon fruit juice concentrate, apple or white

grape, or maple syrup

 

Heat a medium saucepan over medium heat and add the olive oil. Add the

shallots, garlic, ginger, onions, and basil, and cook, stirring, until the

onions and shallots are golden, about 5 minutes.

 

Add the vinegar, tomato paste, tomatoes, cilantro, chili powder, coriander,

cumin, salt, pepper, and fruit juice concentrate. Simmer over llow heat for 20

minutes. Cool slightly and puree with an electric handheld blender or food

processor. Store, covered, in the refrigerator for up to 2 weeks.

 

Description:

" You can brush this on everything. This lightly spiced all-purpose

barbecue sauce will appeal to all. For a little more spice, add hot

sauce or chili peppers to taste. "
