I love the ingredients - balsamic vinegar, basil, tomatoes, and rice vinegar -

Tomato Basil Concasse

10 ripe plum tomatoes -- seeded and diced

6 fresh basil leaves -- julienned

2 teaspoons balsamic vinegar

1 tablespoon extra-virgin olive oil

1 tablespoon rice wine (mirin)

1/2 teaspoon sea salt

freshly ground black pepper

 

In a mixing bowl, toss all the ingredients together gently. Refrigerate until

ready to serve. Store, covered, for up to 2 days in your refrigerator.

 

Description:

" This sauce is the epitome of summer-ripe tomatoes and fresh basil.

You can put it over everything, or mix it with cold pasta for a great

summer salad. For variation, use some yellow heirloom tomatoes for a

nice multicolored salsa. "
