Guest guest Posted May 1, 2001 Report Share Posted May 1, 2001 * Exported from MasterCook * Grilled Cheese-Veggie Sandwiches Recipe By : BH & G Low-Fat & Luscious Vegetarian, page 126 Serving Size : 4 Preparation Time :0:00 Categories : Sandwiches Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 slices whole wheat bread Nonstick spray coating 4 ounces reduced-fat cheddar cheese and/ OR Swiss cheese -- thinly sliced 1 cup finely shredded cabbage 1/4 cup chopped green sweet pepper 1/4 cup chopped seeded tomato Who would have thought a grilled cheese sandwich could taste so fresh? Cabbage, tomato, and sweet pepper turn a plain cheese sandwich into a special lunch or light dinner treat. Spray 1 side of two slices of bread with the nonstick coating. Place bread, sprayed side down, in a large nonstick skillet. Divide half of the cheese between the bread slices. Divide half of the cabbage, sweet pepper, and tomato evenly between the two sandwiches. Top each with a slice of cheese. Spray side of two more slices of bread with nonstick coating. Place bread on sandwiches, sprayed side up. Cook sandwiches over medium heat for 3 to 4 minutes or until bread is toasted and cheese is melted, turning once. Keep sandwiches warm while preparing remaining sandwiches. Repeat assembly and cooking with the remaining 2 sandwiches. Makes 4 main-dish servings. Preparation time: 10 minutes.
