Guest guest Posted May 1, 2001 Report Share Posted May 1, 2001 * Exported from MasterCook * Penne with Soy Vegetable Bolognese Sauce Recipe By :Totally Dairy-Free Cooking - Louis Lanza Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup TVP 1 tablespoon olive oil 1 tablespoon minced garlic 1/2 cup finely diced yellow onions 1 tablespoon tomato paste 1/4 cup chopped fresh basil 1/4 teaspoon red pepper flakes 1/2 teaspoon dried oregano 1 28 oz can whole plum tomatoes -- drained and chopped sea salt 4 cups penne pasta -- cooked as directed soy parmesan cheese, for serving In a small pot, bring 1/2 cup water to a boil and add the texturized vegetable protein. Mix together with a fork and set aside. Heat the olive oil in a medium nonstick skillet over medium heat, add the garlic and onions and cook, stirring, until the oniions are translucent, about 3 minutes. Add the tomato paste, basil, pepper flakes, and oregano and stir. Stir in the tomatoes, bring to a simmer, reduce the heat to low and simmer 5 minutes. Add the TVP and salt, and simmer an additional 5 minutes. Add the cooked pasta to the sauce and mix thoroughly.
