Guest guest Posted May 1, 2001 Report Share Posted May 1, 2001 * Exported from MasterCook * BLACK BEAN & GOAT CHEESE EMPANADAS WITH GREEN MOLE Recipe By :Mark Berlin Serving Size : 0 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups masa harina 2 1/4 cups water -- more or less 1 tablespoon mild chile powder or paprika 2 teaspoons baking powder 1 can refried black beans -- (15 ounce) 3 ounces goat cheese -- (3 to 5) Sauce 3 ounces shelled pumpkin seeds (pepitas) 1 bunch scallions -- chopped 1 cup cilantro leaves 2 tablespoons olive oil 1 poblano chile or 3 jalapenos -- to taste, chopped Zest and juice of 1 lime 1/2 cup vegetable stock Salt -- to taste I. Preheat oven to 375°. In a mixing bowl, com- bine masa, chile powder, and baking powder with just enough water to make a soft dough. Divide dough into 12 pieces and roll each into a ball. (To retain moisture, keep dough covered with a damp towel.) 2. Working with one at a time, flatten each dough ball between sheets of plastic. In a tortilla press or with a rolling pin, press ball into a 6-inch round. Spoon 1 to 2 tablespoons beans and 1 to 2 teaspoons goat cheese onto center. Fold round in half and press edges closed. Place on a nonstick baking sheet and keep covered with a damp towel. Repeat with remaining dough. Bake for about 12 minutes, until lightly browned. 3. In a small skillet over medium-high heat, toast pumpkin seeds, shaking pan frequently, until seeds begin to brown and pop, about 3 minutes. Remove from pan and let cool somewhat. 4. In a food processor combine pumpkin seeds, scal- lions, cilantro, oil, chile, zest, juice, and stock, pro- cessing until smooth. Drizzle sauce over hot empanadas or serve alongside.
