NANCY'S HOMEMADE POWER BARS

Amount Measure Ingredient -- Preparation Method

1 cup loosely packed brown sugar

1/2 cup granulated sugar

3/4 cup margarine or butter

1 egg or vegan equivalent

1/4 cup soy milk or water

1 teaspoon vanilla

3 cups quick or old fashioned oats

1 cup unbleached white flour

1 teaspoon salt (optional)

1/2 teaspoon baking soda

12 ounces chocolate chips (vegan -- if desired)

Cooking spray or oil

 

1. Preheat oven to 350°. In a food proces-

sor, combine sugars and margarine.

Process until creamy. Add egg, soy milk,

and vanilla. Process, scraping down sides

as needed, until well blended.

2. In a large mixing bowl, stir together oats,

flour, salt, and baking soda. Add wet mix-

ture and mix well. Stir in chocolate chips.

3. Spray or oil a 9 x 13-inch baking sheet.

Spread mixture evenly onto prepared sheet.

Bake 25 to 30 minutes, until edges are

browned and top is golden. Remove from

oven, allow to cool, and cut into bars.
