In a large saucepan, combine ingredients and bring to a boil over high heat. Reduce heat and simmer for 15 minutes. 2. Using a coffee filter or other fine mesh strainer over a mixing bowl, strain solids from liquids, gently pressing excess liquid from mush- rooms. Discard solids and use liquid immediately or store, refrigerated, for 1 to 2 days.
