Banana Chocolate Chip Soy Ice Cream

3 bananas -- very ripe

2 pounds soft tofu

3/4 cup sugar or light granulated cane juice

1 1/2 cups soy milk

1/2 cup semisweet soy chocolate chips

 

In a food processor, puree the bananas.

 

Add the tofu and sugar and puree.

 

While processing, add the soy milk and continue to process until the mixture is

smooth. Fold in the chocolate chips.

 

Pour the mixture into a freezer-proof plastic container, and place it in the

freezer, uncovered. Stir every 15 minutes untill the mixture reaches a

semifrozen consistency.

 

Alternatively, pour the mixture into an electric ice cream maker and freeze

according to the manufacturer's directions.

 

Description:

" The rich banana flavor, accented by the soy chocolate chips, makes

this winning combination of fruit and chocolate a hit. Serve with
