Chopped Vegetable, Tofu, and Romaine Salad

1/2 cup chopped string beans

1/4 cup diced bell peppers

1/4 cup peeled and diced cucumber

1/4 cup thinly sliced Bellgian endive leaves

1/4 cup diced avocado

1/4 cup diced tomato

1/2 cup diced Seared Asian Tofu

2 cups thinly sliced romaine lettuce

1 tablespoon extra-virgin olive oil

2 tablespoons rice wine vinegar

sea salt and freshly ground black pepper

 

Bring a small pot of water to a boil. Add the string beans and cook for 1

minute to blanch. Rinse under cold water and set aside.

 

In a mixing bowl, combine all the ingredients, including the string beans, and

season to taste with salt and pepper. Toss well and serve on chilled plates.

Seared Asian Tofu

1 pound firm tofu

1 tablespoon tamari soy sauce

1 tablespoon rice wine (mirin)

1 tablespoon Thai chili-garlic paste

1/2 teaspoon sesame oil

1 teaspoon extra-virgin olive oil

freshly ground black pepper

 

Place the tofu on a paper towel on a plate. Set another plate over the tofu and

top with a heavy object to remove excess moisture, for about 30 minutes. Slice

the tofu lengthwise in 4 equal slices. Place in a shallow Pyrex dish.

 

In a mixing bowl, whisk together all the remaining ingredients. Pour over the

tofu. Marinate the tofu for 15 minutes, turning several times to coat.

 

In a nonstick skillet over medium heat, sear the tofu slices for 2 to 3 minutes

on each side, or until browned.
