Lasagna With Zucchini & Walnuts

2 large carrots -- finely chopped

2 large onions -- finely chopped

2 medium zucchini -- thinly sliced

2 cups purchased light spaghetti sauce

1 tablespoon snipped fresh basil

OR 1 teaspoon dried basil -- crushed

2 cloves garlic -- minced

1/8 teaspoon pepper

1 cup shredded reduced-fat mozzarella cheese -- (4 ounces)

1/4 cup grated Parmesan cheese

Nonstick spray coating

6 no-boil lasagna noodles*

1/4 cup finely chopped walnuts -- toasted

 

Toasting the walnuts intensifies their flavor. For ease, toast them in

your microwave oven. Place them in a small microwave-safe container and

microwave on 100% power (high) for 1 to 2 minutes, stirring about every 30

seconds, until toasted and fragrant.

 

For sauce, in a covered medium saucepan cook carrots and onions in a small

amount of boiling water for 5 minutes. Add zucchini and cook, covered, for

3 to 5 minutes more or until vegetables are tender. Drain thoroughly;

return to saucepan. Stir in spaghetti sauce, basil, garlic, and

pepper. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes,

stirring occasionally. In a small bowl toss together the mozzarella cheese

and Parmesan cheese; set aside,

 

Spray a 2-quart square baking dish with nonstick coating. Place two

noodles in bottom of dish. Spread with one-third of the sauce

mixture. Sprinkle with two-thirds of the walnuts. Sprinkle with one-third

of the cheese mixture. Repeat layers twice more, except end with walnuts;

set aside remaining cheese mixture.

 

Bake lasagna, covered, in a 375F oven for 20 minutes. Uncover and sprinkle

with the remaining cheese mixture. Bake, uncovered, about 20 minutes more

or until lasagna is heated through. Let stand for 15 minutes before

serving. Makes 6 main-dish servings.

 

Note: Not all brands of no-boil lasagna noodles are the same size. Use

enough to have three even, single layers.

 

Preparation time: 30 minutes. Baking time: 40 minutes. Standing time: 15

minutes.
