MAHARAJA'S MIXED NUTS AND DRIED FRUITS CURRY

Amount Measure Ingredient -- Preparation Method

1 cup chopped onion

2 tablespoons vegetable oil

2 cloves garlic -- sliced

1 piece ginger root -- (1/2 inch) sliced

2 fresh -- hot green chiles,

stemmed and chopped

2 teaspoons ground coriander

1 teaspoon ground cumin

1/2 teaspoon cinnamon

1/4 teaspoon freshly ground white pepper

1/8 teaspoon nutmeg

2 cups chopped tomatoes

3/4 cup mixed nuts -- coarsely chopped

(almonds, pistachios and cashews)

1/8 cup plain nonfat or lowfat yogurt

3/4 cup water

1 1/2 tablespoons butter or clarified butter

4 dried apricots -- chopped

1/2 cup sultanas or raisins

1 teaspoon salt -- or to taste

2 squares silver or gold leaf (optional)

6 fresh or preserved cherries (optional)

 

1. In a heavy skillet over medium heat,

saute onion in oil until onion starts to ,

brown, 5 to 7 minutes. Add garlic, ginger,

and chiles, and saute 3 minutes. Stir in

spices and saute until aromatic, about 2

minutes. Stir in tomatoes and cook until

soft, about 5 minutes.

2. Transfer mixture to a blender or food

processor. Add 1 tablespoon of the mixed

nuts and puree until smooth. Add yogurt

and water, and pulse to blend. Set aside.

3. In the same skillet over medium heat,

melt butter. Add remaining nuts and

toast for 2 to 3 minutes. Stir in apricots

and sultanas and saute for 1 minute. Add

pureed mixture and salt. Simmer 10 to

12 minutes, until thickened. Transfer to a

serving dish: Garnish with gold leaf and

cherries, if desired.
